Beans are a great source of fiber, protein and antioxidants. This black bean soup recipe goes together in only five minutes and is great when you want something quick and healthy for the family!
Black Bean Soup
4 cups black beans, drained and rinsed (try to find no salt added beans)
1 ½ cups low sodium broth
1 cup low sodium salsa
1 t. cumin
Put all ingredients into a blender and blend. Pour into a saucepan and heat through. Garnish with shredded cheese, sour cream and green onions.
